Hyttsill
Hyttsill or "Herring a la Glassworks" tradition originates from the time when the glassworks was the local community´s natural meeting place. It was where people gathered to tell stories, swap gossip, spread news and eat meals together surrounded by the warmth of the furnaces. Salted herring may have been a simple food, but prepared with great care it was turned into a delicacy.
The salted herring was fried on the cooling racks where earlier in the day glass had been left to cool and eaten with smoked sausage and baked potatoes followed by Småland´s own special cheescake, all washed down with a mug of cold, foaming beer...
